Have your bananas gone black?

Make this yummy virtually fat free Banana Loaf or muffins. Use them up don't throw them out.  

If your milk is going off it's a good place to use it up too Use an 'American' cup measure 

1 cup self raising flour
1 cup wholemeal flour
1 tsp bicarbonate of soda
1 teaspoon Baking powder      Or you can swap the first 4 ingredients for 2 cups self raising flour
1 teaspoon nutmeg 
1/2 cup caster sugar (or whatever is handy)
1 cup milk (if it's begining to go off that's fine)
2 eggs (or if you have whites left over use 2 egg whites instead of each whole egg)
2 black bananas mashed (although if you have 3 smallish ones it won't hurt to use them all) 
100g dried fruit or fresh or frozen bluberries or raspberries or if you want to go less healthy chocolate chips (chop up a 30p bar instead of buying a bag)  

Mash the bananas and mix in the egg and milk then the sugar
stir in the dry ingredients then the fruit pour into a loaf tin (I split it between 2, the loaf is smaller but cooks more quickly) 
Bake 180 degrees for 30 - 50 mins  Or put it in muffin cases and bake for 15-20 mins.... they fit in the lunch boxes better 

It will be cooked when the cake springs back when  you gently push down the centre 
serve warm or cold sliced with butter if you want to add the fat back 
If I make muffins I sprinkle 1/8 tsp demarara sugar on top of each before baking to give it a crunchy topping
